15 Minute Smoked Bacon & Potato Frittata- Peter

Our Easy Cook Jacket Rooster potatoes are perfect for this recipe.

Just pop the bag into the microwave to cut the prep time in half!


  • Place a pack of our Easy Cook Jacket potatoes into the microwave for 9 minutes. Allow to cool and chop into slices. (Alternatively place 2 palm sized potatoes into a pot, cover with water and boil until soft)
  • Pre-heat oven to 200 °C
  • Heat 2 tablespoons of oil in a pan and add bacon, onion, pepper, tomato and potato.
  • Add the herbs, salt & pepper and stir well.
  • Whisk the eggs in a bowl and pour into the pan evenly.
  • Top with grated cheese and place into the oven until puffed & golden (approx 5 minutes)


  • 6 Large eggs
  • 3 Smoked back bacon rashers (rind and fat removed then chopped)
  • 400g of potatoes, (Cooled & chopped)
  • Half small red onion finely diced
  • Half green pepper chopped
  • One large tomato chopped
  • 75g cheddar grated
  • Thyme & parsley chopped
  • Salt & pepper to taste
  • 1 Tbsp Sunflower or Olive oil
