Keogh’s Ultimate Roasties – Tony

Our Rooster, Maris Piper or Golden Wonder potatoes are perfect for this recipe.


  • Pre-heat your oven to 220 °C
  • Wash, peel, rewash and dry the potatoes.
  • Cut into roughly 3cm irregular cubes and par-boil for 5 minutes.
  • Place 2 tablespoons of olive oil in a roasting tin, add the potatoes and baste well
  • Add the fresh Thyme and season with salt & pepper.
  • Cook for 45 mins until golden brown.
  • Enjoy


  • 12 Keogh’s Rooster potatoes (cut in half)
  • 2-3 sprigs of Thyme
  • Sunflower or Olive Oil
  • Salt & Pepper
