Perfect Mash in Minutes – Derek

Our Rooster, Maris Piper or Kerr Pink potatoes are perfect for this recipe.


  • Peel and rinse the potatoes and cut into even sized pieces.
  • Place the potatoes in a saucepan and cover with water.
  • Bring to the boil and then reduce to a simmer for 20 mins or until cooked.
  • Once soft, drain the potatoes and mash.
  • Heat the butter and milk in a separate pot and add to the mashed potato.
  • Continue to mash the potatoes until smooth and lump free.
  • Stir in the spring onions and season with salt & pepper to taste.


  • 600g Potatoes
  • 2-3 Spring Onions (Chopped finely)
  • 25g Butter
  • 75ml Milk
  • Salt & Pepper to taste
