Spicy Potato Wedges
Rustic potato wedges roasted until crisp and caramelised, coated in warming spices for a satisfying kick.

Ingredients
- 1kg Keogh’s Golden Wonder Potatoes
- 1-2 tablespoons of olive oil
- 1 teaspoon of smoked paprika
- ½ teaspoon of ground cumin
- ¼ teaspoon of cayenne pepper
- Salt and freshly ground pepper
- 1 clove of garlic, finely grated
- Chopped scallions
- Thinly sliced red chilli
- Sesame seeds
- Sour cream to serve
Method
- Preheat the oven to 200c/180c fan/gas 6.
- Leaving the skin on, cut each potato lengthwise into 8 wedges and put into a bowl.
- Drizzle over the olive oil, spices and salt and pepper. Tumble onto a large baking sheet and spread out.
- Roast for 20 minutes then turn them over and sprinkle over the garlic.
- Roast for another 20 minutes until crispy and golden. Garnish with chopped spring onion and red chilli and sprinkle with sesame seeds. Serve hot with a sour cream dip.
