Garlic Parmesan Smashed Baby Potatoes
Smashed Baby Potatoes with a delicious Garlic Parmesan butter

Ingredients
- 1 pack of Keogh’s Easy Cook Baby Potatoes
- 2 Cloves garlic
- 1 Tsp garlic Salt
- 40g Parmesan
- 2 Tbsp Olive Oil
- 50g Butter
- Parsley
- Salt & Pepper to season
- Sour cream to serve
Method
- Cook the potatoes according to the pack instructions
- Place potatoes on a baking sheet covered with parchment paper or foil. Allow the potatoes to rest 5 mins.
- Next pour 2 Tbsp oil over the potatoes and ensure each potato is coated.
- To “smash” the potatoes, press down on each potato with the bottom of a mug or glass cup.
- Now make the garlic Parmesan butter by combining softened butter, Parmesan cheese, pressed garlic, and 1 tbsp garlic salt. Mix together then evenly distribute the butter by placing a small amount of butter on each smashed potato.
- Place the baking sheet into the airfryer at 200C for 10-15mins to crisp up
- Once the potatoes are done, removed from the airfryer and garnish with extra grated Parmesan cheese and chopped parsley.
- Place smashed potatoes on a serving platter and serve with sour cream.
