Indian Potato Chickpea Masala

A vibrant Indian-inspired curry with tender potatoes and chickpeas simmered in aromatic spices for a warming, flavour-packed dish.

Ingredients

  • 900g Keogh’s Maris Piper Potatoes
  • 2 Tbsp Olive Oil
  • 2 Onions
  • 2 Cloves Garlic
  • 1 Tbsp Ginger
  • 1 Tbsp Garam Masala
  • 3 Tbsp Masala Curry Paste
  • 400g Chickpeas
  • 400g Chipped Tomatoes
  • 400g Coconut Milk
  • 100g Baby Spinach
  • 1 Tbsp Coriander
  • 2 Tbsp Greek Yogurt

Method

  1. Heat olive oil to a pan and add sliced onions, diced garlic cloves, ginger, garam masala, masala Curry Paste
  2. Stir thoroughly on a medium heat
  3. Dice the potatoes and add to the pan along with chickpeas, chopped tomatoes, coconut milk and salt & pepper to taste
  4. Stir thoroughly & simmer on a low heat
  5. Add baby spinach & stir through
  6. Add coriander, stir thoroughly
  7. Serve with a dollop of Greek yogurt
