Indian Potato Chickpea Masala
A vibrant Indian-inspired curry with tender potatoes and chickpeas simmered in aromatic spices for a warming, flavour-packed dish.

Ingredients
- 900g Keogh’s Maris Piper Potatoes
- 2 Tbsp Olive Oil
- 2 Onions
- 2 Cloves Garlic
- 1 Tbsp Ginger
- 1 Tbsp Garam Masala
- 3 Tbsp Masala Curry Paste
- 400g Chickpeas
- 400g Chipped Tomatoes
- 400g Coconut Milk
- 100g Baby Spinach
- 1 Tbsp Coriander
- 2 Tbsp Greek Yogurt
Method
- Heat olive oil to a pan and add sliced onions, diced garlic cloves, ginger, garam masala, masala Curry Paste
- Stir thoroughly on a medium heat
- Dice the potatoes and add to the pan along with chickpeas, chopped tomatoes, coconut milk and salt & pepper to taste
- Stir thoroughly & simmer on a low heat
- Add baby spinach & stir through
- Add coriander, stir thoroughly
- Serve with a dollop of Greek yogurt
