Spanish Chicken, Chorizo & Potato One Pot
A quick and flavour-packed Spanish-style one-pot. Succulent chicken thighs, smoky chorizo and baby potatoes are simmered with paprika for a rich, satisfying meal.
The best bit…only one pan to wash up!

Ingredients
- 500g Keogh’s Baby Potatoes
- 8 Chicken Thighs
- Salt & Pepper
- 1 Tbsp Olive Oil
- 100g Chorizo
- 2 Red Onions
- 6 Garlic Cloves
- 1 Courgette
- 2 Tsp Thyme
- 1/2 Tsp Smoked Paprika
- 200g Kale
- 25g Pumpkin Seeds
- 1/2 Lemon
Method
- Add Baby Potatoes and Chicken thighs to a baking dish
- Season with salt & pepper to taste, add the olive oil
- Cook in the oven at 220c for 10 minutes
- Remove from the oven, add Chorizo, Red Onions, Garlic Cloves, Courgette, Thyme, Smoked Paprika
- Return to the oven for 10 more minutes
- Remove from the oven, add Kale & return to the oven for 5 more minutes
- Add Pumpkin Seeds, Lemon juice and serve
