Spicy Potato Wedges

Rustic potato wedges roasted until crisp and caramelised, coated in warming spices for a satisfying kick.

Ingredients

  • 1kg Keogh’s Golden Wonder Potatoes
  • 1-2 tablespoons of olive oil
  • 1 teaspoon of smoked paprika
  • ½ teaspoon of ground cumin
  • ¼ teaspoon of cayenne pepper
  • Salt and freshly ground pepper
  • 1 clove of garlic, finely grated
  • Chopped scallions
  • Thinly sliced red chilli
  • Sesame seeds
  • Sour cream to serve

Method

  1. Preheat the oven to 200c/180c fan/gas 6.
  2. Leaving the skin on, cut each potato lengthwise into 8 wedges and put into a bowl.
  3. Drizzle over the olive oil, spices and salt and pepper. Tumble onto a large baking sheet and spread out.
  4. Roast for 20 minutes then turn them over and sprinkle over the garlic.
  5. Roast for another 20 minutes until crispy and golden. Garnish with chopped spring onion and red chilli and sprinkle with sesame seeds. Serve hot with a sour cream dip.
